Chole Bhature | The dish mentioned in my Book

Chole Bhature

Ingredients:
Kabuli chana: 250 grams
Soda: 1/2 tea spoon
onions (paste): 3 nos.
tomatoes (paste): 3 to 4 nos.
garlic: 5 to 8 cloves
cinnamon: 2 pieces
cloves: 5 to 8
magatari seeds: 3 table spoons
garam masala: 1 tea spoon
red chilli powder: 1 tea spoon
turmeric powder: 1/2 tea spoon
cumin powder: 1 tea spoon
chole masala: 1 table spoon
ginger (paste): 1 tea spoon
green chillies (paste): 3 nos. chillies
oil: 1 table spoon
coriander leaves
salt to taste

For Bhature/Kulcha

maida: 1 cup
yogurt: 2 table spoons
wheat flour: 2 table spoons
oil: 4 tea spoons
salt to taste


Method:

1. Soak the kabuli chana for 7 hours. Add little soda and boil the chana in a pressure cooker. While boiling add a little salt to it.

2. Crush tomatoes onions and garlic to a paste. Soak the magatari seeds in water for few min. Crush them into a paste.

3. Mix cinnamon, cloves, magatari paste, garam masala, salt, red chilli powder, cumin powder, turmeric powder, chhole masala, ginger+green chilli paste in a bowl. Add a little water to it. Soak these masalas for 5 min.

4. Heat the oil and fry the onions+tomatoes+garlic paste until light pink in colour.

5. When the oil separates, add the masalas. Fry again for few min.

6. Add the chhole and cook for few min.

7. Garnish with coriander.

For Bhature/Kulcha

1. Mix all ingredients and knead a soft dough. Make a medium size ball.

2. Roll out each ball into puri. Deep fry in hot oil.

3. Serve with chhole.
